Spinach & Bacon Quiche

For Christmas morning I made this quiche and it was so good that I have been making it frequently on weekend mornings. With Easter this weekend, I thought it would be a good recipe to share if you are still trying to decide what to make for brunch. My plan is to make them Saturday and re-warm on Sunday since the hustle will be real that morning with an Easter egg hunt, getting dressed, and out the door to church. While the quiche is best straight from the oven, it still tastes great re-warmed!

Ingredients:

6 large eggs

1 1/2 cup half-and-half or milk

2 cups packed freshly chopped spinach

1 pound bacon cooked and crumbled

3/4 cup swiss cheese

1/2 cup cheddar cheese

1/4 cup grated parmesan cheese

1/4 teaspoon salt

1/4 teaspoon pepper

1 (9-inch) refrigerated pie crust

(optional) 1 tablespoon chopped onion

Directions:

Preheat the oven to 375 degrees F.

Combine the eggs, half-and-half, salt, and pepper in a food processor or blender.

Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top.

Bake for 35 to 45 minutes until the egg mixture is set. Cut into wedges and serve!
